Modern wheat: why is it so wrong?
Wheat has been at the center of the human diet for thousands of years. It is in fact the foundation of civilization: it easily cultivates, preserves for years the shape of the kernel, releasing its nutritional goodness when the seed is ground and prepared in fresh bread or porridge. This is how the grains have been consumed over the millennia: stored in full kernel form and fresh fresh, full of life and nutrients. So why is it considered a “dangerous” food? In this article, the authors wanted to expose the problems of modern wheat.
